Sautéed green beans with tomatoes – Fagiolini in umido
An easy way to add vegetables to your table. Perfect for all types of diets as it only includes green beans and tomatoes!

Ingredients
- 300 g (10.5 oz) green beans
- 1–2 cloves garlic, peeled
- 10-12 cherry tomatoes
- 2 tbsp crushed tomatoes or tomato sauce
- 2 tbsps extra virgin olive oil
- Salt, to taste
Preparation
Trim the ends of the green beans and wash them. Wash and cut the cherry tomatoes in halves.
Bring a large pot of water to boil. Add salt and boil the green beans for 8-10 minutes. They should be cooked but still crisp.
In a large skillet, heat the oil and add the peeled garlic, halved and with the stem removed. Brown for 1-2 minutes.
Add the halved cherry tomatoes and sauté for about 2-3 minutes at medium heat, stirring occasionally. Add the crushed tomatoes and cook stirring for 5 minutes.
At this moment, your green beans should be cooked. Drain and add them to simmering tomatoes.
Simmer uncovered for about 10 minutes. Add water if the sauce becomes too dry.
Season with salt and serve.
Tips & notes
- You can add the red pepper flakes together with the tomato sauce to make this dish spicier.
- Some people add wine and basil at the end and let them cook for a few extra minutes. I didn’t do it this time, but I can try in the future!
