Pan-seared garlic and red pepper flakes broccoli – Broccoli con aglio e peperoncino in padella

Ingredients
- 450 g (about 1 lb) broccoli, cut into small florets (about 5 cups)
- 1 large garlic clove
- 2 tbsps extra virgin olive oil
- 1/2 tsp red pepper flakes
- 1/4 fine salt, to taste
Preparation
Wash and divide the broccoli into small florets.
Bring water to a boil. Add coarse salt and, once dissolved, boil broccoli florets for 4-5 minutes.
Drain the broccoli, place it in a bowl with cold water and ice cubes, or simply under cold water (this will help preserve the broccoli’s bright green color).
Heat oil in a skillet over medium heat. Add the peeled garlic and the red pepper flakes. Brown for 2-3 minutes, until garlic, gets just gold.
Add the broccoli and sprinkle with salt, stirring to coat in the oil. Cook for 5 minutes, uncovered at medium heat.
Remove the garlic clove and serve.

- Make sure not to burn the garlic!
