Celery stalks with gorgonzola – Barchette di sedano e gorgonzola

Ingredients
- 60 g (2 oz) gorgonzola cheese
- 3 teaspoons whole milk (or cream cheese)
- 10 celery stalks
- 1 tbsp honey
- 1 teaspoon of extra virgin olive oil
- 10 walnuts
Preparation
In a small bowl, stir the gorgonzola with the oil and milk (or cream cheese) to obtain a creamy texture.
Wash, trim and cut the celery stalks into 2-inch (5 cm) pieces.
With a spoon, place a piece of the cheese mixture on the celery stalks.
Place a little drop of honey on each piece of gorgonzola and top with a walnut.
Tips & notes
- You can decorate this plate with some chopped chives.
- Make this dish ahead and let it rest in the fridge for a few hours.
- I use the gorgonzola “cremificato,” which means creamy, soft. You can find it at Eataly!
- I like to place the gorgonzola on one side of the celery stalk so that you can grab the other side of it without putting your fingers in the cheese!
